The city of Lyon, located in east-central France, is famous for its gastronomy. Go with Florence Villeminot and Genie Godula to a typical local restaurant – known as a “bouchon” – serving traditional Lyonese cuisine, a hearty meal featuring offal and wine by the bottle. They also take you to the restaurant of the revered French chef Paul Bocuse, who passed away in 2018. We even learned how to cook frog legs thanks to Michelin-starred chef Olivier Couvin, who continues the Bocuse tradition to this day. This issue of French Connections is a great opportunity to delve into Lyon’s food culture and learn about the city’s history.
